A beautiful, two part copper mould for nougat. This lovely mould is in the shape of a swan and it dates from c.1890. It is marked, to both sides, 'TROTTIER FNT PARIS'. Trottier were one of the leading manufacturers of copper kitchenware in France in the 19th century. The design is very well detailed and the mould is well made so that the two sides fit together neatly. It is in very good condition and it is good to find the two parts of this type of mould still together. The tinning, to the interior, is still good enough for the mould to be used. Originally there would have been clips to hold the two sides together but these are now missing.
