A set of 12, 19th century, French canale moulds. Canales are a small, French sponge cake which are still very popular all over France. I am told that they cook much better in copper but I have never made them myself. These moulds are all made from a substantial gauge of copper and they date from c.1890. It is unusual to find such a large set of this age. Each one measures 4.6cm diameter by 4.5cm. high. They are all in excellent condition and the tinning is still in good, usable condition.
