A French steel cleaver in the shape of a horse. This ornate type of cleaver was used in the confectioners kitchens for cutting sugar or ice. This one is well shaped, as a heavy horse, and it has a copper rivet for an eye. The handle is made from a fibre block. Originally this was attached by three copper rivets but two of these are now missing. The cleaver dates from c.1900 and, other than the missing rivets, it is in good condition.
