A nineteenth century, French copper skimmer or fish slice. This type of utensil was used for skimming when making preserves and also for removing fish from a pan. This example is made from a heavy gauge of copper, has a turned end to the handle which is shaped like a shepherd’s crook, and it dates from c.1890. It is in excellent condition.
