An antique French copper, brasing pan and coverdating from c.1860. There are no manufacturers marks on this piece but it is marked with a number '1' to both ends of the pan and also to both ends of the lid. In the large kitchen there may have been a number of similar items so each one would have been numbered in its size order within the kitchen. This piece has ornate brass handles to either end and the lid has a raised rim with a central brass handle. The raised rim was designed so that you could put hot coals, or embers, into it and then the contents of the pan were cooked from both below and above. This piece is well made, from an exceptionally heavy gauge of copper, and it has castellated seams around the base and up the side. It is in excellent condition and the interior has been re-tinned, in the traditional manner, so that it can be used.
Dimensions including the handles: Length 45cm. (17 3/4in) Width 23.5cm. (9 1/4in) Height 23.5cm. (9 1/4").
