A super quality, two part, brass mould for nougat, sugar or chocolate. This is marked “LETANG FILS PARIS 108 R.VIEILLE DU TEMPLE” and it dates from c.1880. It is also stamped with the number “2747” which may be a pattern number. It is beautifully modelled in the shape of a sturgeon and would turn out a fantastic, three dimensional figure. The shape is often referred to as a dolphin rather than a sturgeon but the sturgeon has scales whereas the dolphin doesn’t. The sturgeon was declared a royal fish by Edward the Second in 1324.
